Review & Recipe: Taco Soup w/Lawry's Taco Seasoning

 We are now officially in Autumn, which means the air is getting chilly, so it's time to start making hearty comfort foods.

Lawry's has a huge line of seasonings and flavor packets to meet all your cooking needs. One of my personal favorites is Lawry's Taco seasoning. It has everything you need for authentic taco flavor, in one little packet! But taco seasoning is not just for tacos...check this out:


Taco Soup

2 cans of whole Black Beans (undrained)
2 cans of Pinto Beans (undrained)
2 cans of Diced Tomatoes w/Green Chilies
1 can of Whole Kernel Corn (drained)
1 pack of Lawry's Taco Seasoning
1 pack of dry Ranch salad dressing mix
1/2 small onion (diced)
1 fresh jalapeno (diced)
1 lb ground beef or turkey (optional)
2 diced green onions
1 cup grated Cheddar Cheese
fresh cilantro leaves
sour cream (optional)

In a large stock pot, combine black beans, pinto beans, corn, taco seasoning, and dry ranch dressing. Bring to a low boil. Add onions, jalapenos, and a few cilantro leaves.  If you decide to use ground beef or turkey, cook in a separate skillet, and drain all the fat off the meat before adding it to the soup pot.  Allow the soup to simmer on low heat for about 15 minutes.  To serve, garnish with green onions, cheddar cheese, sour cream, and cilantro.

Vegetarian Taco Soup

This is a quick and easy recipe, for any day of the week.  It's packed with flavor and full of fiber too. Your family is guaranteed to love it!

Review: Lawry's Southwest Chicken Skillet

Lawry's has been a trusted name in American kitchens for over 70 years. My mom seasoned EVERYTHING with Lawry's Seasoned Salt when I was a kid, so it's no surprise that you can find it in my cupboard too!


Lawry's makes dinner fast and easy with their inspired seasoning packets. Last night I tried the Southwest Chicken Skillet , well actually I made a Southwest Tofu Skillet, but it was delicious!

Here's Lawry's Easy recipe:

Southwest Chicken Skillet 

Prep Time: 10 min
Cook Time: 20 min

1 tablespoon oil
1 1/4 pounds boneless skinless breast tenders
1 packet of Lawry's Southwest Chicken Skillet Seasoning Mix
1 can (15 oz) black beans (drained)
1 can (14.5 oz) diced tomatoes (undrained)
1 can (15.25 oz) whole kernel corn
1 cup instant white rice
1 cup water
1 cup shredded Mexican cheese blend.

Heat oil in large nonstick skillet on medium high. Add chicken, cook and stir for 5 minutes or until lightly brown. Stir in seasoning mix, beans, tomatoes, corn, rice, and water. Bring to a boil, reduce heat, cover, and simmer. Remove from heat. Sprinkle with cheese and let stand until cheese is melted.

Here's my version:

Southwest Tofu Skillet

1 tablespoon oil
1 packet of Extra Firm Tofu
1 packet of Lawry's Southwest Chicken Skillet Seasoning Mix
1 can (15 oz) black beans (drained)
2 large firm tomatoes (diced)
1 1/2 cups of frozen Fire Roasted Corn Kernels

1 cup of cooked brown rice
1 cup shredded Mexican cheese blend
Garnish with corn chips, green onions and cilantro (optional)

Heat oil in large nonstick skillet on medium high. Add tofu, cook and stir for 5 minutes. Stir in seasoning mix, beans, tomatoes, corn, and rice. Reduce heat, cover, and simmer. Remove from heat. Sprinkle with cheese and let stand until cheese is melted.


My family LOVED this!  It was simple and easy to make and the flavor was spectacular. It was both delicious and filling.  Only a few ingredients, very little preparation, and presto! Dinner is served.
